We are proud to represent the U.S for COMO Hotels, as part of the company-wide initiative to commemorate this day of action to eradicate hunger and support local agriculture.”

With a focus on organic sustainability and seasonal ingredients, Chef Juan Loaisiga will introduce a locally sourced three-course menu that will run from October 10th to October 22nd at a set price of $35 for lunch at dinner at the hotel property. The menu at the Traymore is focused on fresh, seasonal ingredients from Florida and other regions of the United States. Fish, shellfish and crustaceans are sourced from small-scale, reliable, sustainable fisheries from Florida and around the country. The domestic fisheries sourced from use sustainable practices in order to preserve our oceans and reduce their footprint. The Traymore further reduces its footprint by purchasing from these local providers, instead of turning to large-scale warehouses or fish farms. The restaurant’s relationship with vendors gives it the ability to obtain the freshest fish as soon as it is available. The Traymore receives its fish in less than 24-hours from when it was caught, before skillfully preparing and serving it with pride to hotel restaurant guests.
