 Miami Beach Culinary Captain and Executive Chef Jonathan Lane showcases the restaurant’s finest gourmet cuisine during the festival’s signature events over three days

Executive Chef Jonathan Lane from The Traymore Restaurant and Bar at the newly opened Metropolitan by COMO, Miami Beach, the inaugural hotel property in the U.S by COMO Hotels and Resorts, will make his debut at this year’s South Beach Wine and Food Festival as the Culinary Captain for Miami Beach during the restaurant’s participation in three of the festival’s most prestigious signature events.

Retro Feast Dinner Dish_Arctic Char, Apple, Brussels sprouts, hazelnuts, squid ink saladWhile already making his mark on the South Florida culinary scene, Chef Lane has been selected by the festival’s committee to make his inaugural participation on behalf of the restaurant during three signature events over the four-day festival, including at the Retro Feast Dinner, co-hosted by Ben Ford and Ashley Christensen as part of The New York Times Dinner Series; Wine Spectator’s Best of the Best sponsored by Bank of America and Merrill Lynch and as the Culinary Captain for Miami Beach at the Whole Foods Market Grand Tasting Village.

For the Retro Feast Dinner on Thursday, February 19th at The Traymore Restaurant and Bar, Chef Lane will be joined by fellow chefs Ben Ford (son of Harrison) and Ashley Christensen for an exclusive 60-seat four-course dinner during which a set menu will be prepared by each chef developing their own dish in the kitchen.  During this unique culinary collaboration, passed hors d’oeuvres will be created by Chef Lane for the welcome reception.  The appetizer will comprise of red mustard greens with coal-roasted beets, developed by Chef Ashley Christensen.  Chef Jonathan Lane will present the first entrée – seared Artic Char.  Ben Ford will present a bacon-wrapped quail as the second entrée, and the Traymore’s Executive Pastry Chef, Emanuel Alves, will delight attendees with his most popular dessert, the passion fruit cannelloni to finish.  Tickets are priced at $250 per seating and can be purchased at http://sobefest.com/benford.

Fontainebleau Miami Beach presents Wine Spectator’s Best of the Best on Friday, February 20th, at the Fontainebleau Miami Beach.  As one of more than 60 participating restaurants, Chef Lane and The Traymore Restaurant and Bar will showcase a premium signature dish to an attendance of several hundred people.  Chef Lane will be presenting his seared octopus with duck fat potato, salsa verde and first pressed olive oil, during one of the festival’s most popular evening events.  Tickets are priced at $350 per person and can be purchased at http://sobefest.com/best.

At the Whole Foods Market Grand Tasting Village on Saturday, February 21st, located on the sands of South Beach and adjacent to Ocean Drive, Chef Lane will be representing Miami Beach as the district’s Culinary Captain.
