With the opening of the highly anticipated KLIMA Restaurant and Bar around the corner, KLIMA Miami co-founders Pablo Fernández-Valdés and Yago Giner Viscasillas hosted lunch for the Spanish culinary icon and legendary founder of new-age Basque cuisine, Juan Mari Arzak, at the restaurant on Friday, along with a number of other prolific 3-Michelin Star chefs who were in town for the South Beach Wine and Food Festival. The group comprising of Mr. Juan Mari Arzak, Quique Dacosta (Quique Dacosta Restaurant in Spain), Andoni Luis Adurizis (Mugaritz restaurant in Spain) and Alex Atala (D.O.M. in São Paulo), enjoyed an 8-course sample menu, courtesy of KLIMA’s Executive Chef, David “Rusti” Rustarazo. Guests enjoyed dishes that included grouper, steak tartar with truffles, beef cannelloni, fennel carpaccio and ceviche.
The private lunch at KLIMA Restaurant and Bar was a pre-cursor to Saturday’s tribute dinner for Juan Mari Arzak at The Loews Hotel, for which tickets were available at $500 each.
