Blending modern Japanese cuisine with inventive mixology, Kasumi, the waterfront Japanese restaurant located along the Intracoastal Waterway at the Waterstone Resort & Marina, debuts an innovative, exceptional food and cocktail menu–proving that even an esteemed eatery can continue to raise the bar. Under the creative leadership of Executive Chef Toyoji Hemmi, the new offerings showcase precise, artful approach to sushi alongside inventive interpretations of contemporary Japanese cuisine. From meticulously crafted nigiri and sashimi to bold, flavor-driven dishes, Chef Hemmi seamlessly blends time-honored techniques with seasonal, locally sourced ingredients, delivering a dining experience that is both refined and refreshingly dynamic.

The updated menu introduces an array of standout dishes for every palate. Highlights include Toban Sukiyaki with tender chicken, Shimeji mushrooms, scallions, eggplant, and haricots verts in a delicate soy caramel; Grilled Hamachi, lightly charred and finished with sea salt or teriyaki; and playful favorites like Takoyaki and crispy Chicken Kara Age.

Signature rolls are reimagined with creations such as the Tazuna Roll, a vibrant rainbow roll of king crab and cucumber layered over sliced fish, and the Vegetable Roll, which combines cucumber, avocado, asparagus, and carrot with a bright key lime mayo drizzle. Lighter fare like the Seaweed and Cucumber Salad tossed in sesame-ginger vinaigrette provides balance, while indulgent bites such as the Golden Ostra Caviar Blini offer a luxurious flourish.

Perennially well-received favorites remain, including Chicken Toban Yaki with Shimeji mushrooms, eggplant, and yuzu butter, Saikyo Miso Marinated Black Cod with hijiki seaweed and miso butter, and Beef Short Rib Fried Rice with farm egg, carrots, and garlic, all reflecting Chef Hemmi’s commitment to seasonal, artful cuisine.

Complementing the new menu, Kasumi is also launching a new spring beverage, featuring a curated selection of seasonal cocktails, including the Any Hour Margarita (made with Santoro Tequila, lime, and agave), the Golden Hour Spritz (Aperol, Angelica Botanical, Prosecco, and freshly squeezed lemon), and the Spring Spirit (86 Degrees Gin, mango, cucumber, and mint). The offering is elevated further by an extensive offering of premium Japanese whiskies, sake, and a globally sourced wine list designed to enhance every dish.

Rooted in the Japanese philosophy of omotenashi, the art of wholehearted hospitality, Kasumi blends warmth and elegance within a modern coastal setting designed by Heidi Avedisian of White Ink Design. Natural textures such as teak, rattan, and limestone complement serene waterfront views, while the indoor dining room flows seamlessly onto an outdoor terrace, featuring bar seating and a private dining space for intimate gatherings.
